Probably shot in protest to all that is beautiful, I compared these wierd whatevers to other root vegetables on google images, and decided they were celeriac.
Celeriac is great source of fiber, and high in vitamin B6, C, K, magnesium, manganese, phosphorus, and potassium. It is low in saturated fat and cholesterol and extremely low in calories. One-half cup of raw celeriac is only 21 calories.
So how does one take advantage of this unlikely item? As luck would have it, I just saw a great slaw recipe using celeriac and carrots on Huffington Post. Kerry Saretesky, blogging from France says, " I eat it with lunch and dinner, and leftovers are even better the next day. Every time I take it off my nearly-sagging refrigerator shelf, I look at it like an old friend, and discover I love it even more than I did yesterday. Bon app."
