White or orange the beautiful  pumpkin needs to be considered beyond a decorative garnish or dessert for the holidays.

Pumpkins are an excellent source of fiber and vitamin A, but their benefits become adulterated because of the ways we use them. And I am talking about pumpkin pie. Depending on the recipe, and the toppings, the calories can be uncountable.

Of course there are low fat versions of everything, but your best bet with pumpkin is to discover how to use them in foods other than dessert.  A cup of pumpkin puree has only 50 calories!

Roasted pumpkin is a great base for soup or a colorful garnish to a  vegetable platter. Thinking of pumpkin as a savory instead of a sweet will help you find new uses for this healthy gourd.

White pumpkins can change your perspective. They are associated with curries and East Asian foods, not Halloween, Thanksgiving and Christmas.
