There is nothing as refreshing as a summer salad. When the ingredients are combined with a clear light dressing in a glass bowl, you can feast with your eyes as well as your palate.
At a recent dinner at my Dad's house, his wife Sunnie prepared a delicious meal of meat, potatoes and salad. Sound mundane? It was marvelous.
The meat was Costco's New Zealand lamb chops, the potatoes were sweet, and the salad was a mixture of yellow tomatoes, grilled red peppers, hearts of palm, white feta, and black olives dressed in a seasoned rice wine vinegar.
Great pairings are what delicious dinners are all about. Vibrant colors complement any meal and vegetables with color add antioxidents, vitamin C, vitamin A, and dietary fiber to help maintain healthy bodies.
