It appears that my posts about good vs bad fats are outdated. Fats are not the enemy after all.
A recent article in Time Magazine states that we were bullied into getting it wrong about fats by Ancel Keys, famous for his Seven Countries Study and K-rations. Evidence shows fats have less association with heart disease than the USDA dietary guidelines led us to believe. It is our consumption of "light" foods that is making us heavy.
Processed foods with artificial sweeteners, synthetic trans fats and refined carbohydrates cause changes in our blood chemistry that make the body store calories as fat. The incidence of Type 2 diabetes is epidemic. In a vicious cycle, explained by Duke's Dr. Eric Westman, our cells become more resistant to insulin which causes weight gain and more insulin production. He has updated the Atkins diet substituting carbohydrates with fats to manage and even reverse diabetes.
Several researchers including Michael Pollan and Harvard nutrition expert Dr. Frank Hu recommend that we focus on the quality of our food and eat real food instead of processed food. If you can't cook or don't have the time, most cosmopolitan cities have services like Blue Apron and Just Add Cooking that will help you conquer your fears of starvation. And for those very determined to get it right, plan a field trip to Italy to imbibe the Mediterranean Diet.
Exchanging carbohydrates for fats should be fun and easy.
