Whole Grains - What They Are and Why they are Expensive

A whole grain is just that.  It contains all three parts of the grain, the bran, the germ and the endosperm. Whole grains are healthier than processed grains because the essential protein, vitamins, minerals and fiber remain with the grain.

The popular mindset for schools when they attempt to introduce whole grains into children's diets is pasta and bread.

But even a quick review of the Whole Grains Council website, shows an A-Z list of 26 possibilities to explore. Finding some of these items in your local grocery store can be a challenge, but the Whole Grains Council has stamped products to help you.

Schools have a problem because whole grains are more expensive than processed grains.  There is the marketing cachet that creates demand and increases price.  Additionally, whole grains have a reduced shelf life. The bran and germ contain oils that will go rancid without refrigeration. And then there are farm subsidies.

Our whole way of life will have to change to get more whole grains on the table.
